Vouchers or cash refund

We are advised to pay for holidays with a credit card as a safety measure should things go wrong. We have paid for a holiday with a credit card and the holiday is cancelled (due to Covid-19).  They say that they will be offering a cash  refund or a voucher + £100 for a new holiday.   If we use the voucher,  will it count as a new cash booking losing the security of a credit card payment  or will the security of the original credit card payment be retained.  I cannot find the answer to this.  Although regulations being currently discussed may give the travel company the right to insist on a voucher

We all know the value of T.Cook vouchers = £0.  So, as I've booked with a small tour operator, similar question from me: Will Section 75 and/or ATOL protection be undermined if I accept a voucher or make another booking?  (I do not anticipate a subsequent booking before a Covid-19 vaccine is available to me, probably cira 2022 or later).
