Onward travel costs for flight changes

Our flight was cancelled whilst we were in lanzarote
We were offered an earlier flight leaving 2 days early at 12.05 midday. We accepted this. We were told we would get our seat numbers at airport check in. I asked several times if we definitely had seats and I was told we did. We got to airport and standby tags were attached to our luggage. I queried this and was told we were not guaranteed seats and we just had to wait and see what was left after all other boarding was complete. We went to the boarding gate and there were at least 100 other "stand by" travellers on the same flight TO edinburgh. Ryanair had sold many of them flights and none had seats. People with kids and elderly were offered the few seats that were left. They then just closed boarding and announced they had a "rescue flight" on the way from UK returning to Stanstead. So all these people booked on a flight to edinburgh were changed to Stanstead. After a lot of people being very unhappy about this the airline announced they had a second flight to Liverpool. The airline were asked about onward travel and they said people would need to make their own arrangements. Sorry for long winded story but just want you to get the picture. The flight was due to leave at 7pm, 7 hours after the original flight. We took off at 10 pm approx after sitting on the plane for over 2 hours. Finally arrived in liverpool in the early hours. We booked a premier inn to get a few hours sleep and rented a car to get home the next day. The cost of all this was £327 for 4 of us. Can we claim this back via the airline or insurance?
