Put in your text and then select the words you want to link by clicking and dragging, then click the wee icon that looks like a chain and put mailto: in front of the email address, so when you click the chain icon, in the box that appears you would type

mailto:hello@thisrandomemailaddress.com

To add a Subject to that you would do : 

mailto:hello@thisrandomemailaddress.com?subject=Competition

Thanks thingamaBob, can you please clarify?
Eg Email address      abcde@defg.com
I selected above email address, then clicked chain icon (next to emoticon icon above), but when trying to drag across I get a message saying 'drop image/file'.
Where am I going wrong?

So, in this example, highlight abcde@defg.com, copy and click the chain icon. Remove the http:// that's already in the box and type "mailto:" and then paste the email, so it should look like this in the box - mailto:abcde@defg.com
