CASS switching involves switching a single account into another one - you specify which account you are moving, so if you have multiple accounts with a single bank then only the one you specify will switch (unless you specify multiple account switches!)

Some accounts will pay switching incentives to existing customers, whilst others won't. You'll need to read the T&Cs to see what does and doesn't apply to you. If you're struggling for DDs, you can always move a few existing ones around (eg. credit card, home utilities, etc) for a month or two whilst you are switching and then move them back, otherwise see here for other ideas: https://forums.moneysavingexpert.com/discussion/57346320
