OP, are you essentially getting 9 months notice pay?
If so, I think you may be better to accept that and move on. I agree it’s unfair but the situation is beyond repair so a financial settlement is the best outcome now and 9 months after 2 years service is the best you’ll likely get?
I’d resist any attempt at under the table offers though - the first £30k is tax free anyway and PAYE/NIC should be paid on the rest.
Another option might be to quietly take his under the table money - then “double check” your personal tax account after April and shop him to HMRC for non payment of the PAYE, NIC and ENIC. This might satisfy your desire for revenge (if there is any) but personally I’d avoid this as it’s even messier.
