Taxes not paid and Company dissolved. What can I do?

Nope, can't happen as you have the payslips.
It is the employers responsibility to ensure HMRC are paid and records are accurate. As far as you know, you have the payslips that tell you it is being declared and paid. You've done nothing wrong.
The only issue now is that HMRC don't have record of you, which you need. So you need to speak to HMRC to get this updated, and provide them with payslips of evidence of this.0 -

As others have said, you need to contact HMRC, provide them with the evidence (i.e. your pay slips).
They should in the first instance seek to recover the tax from your former employer, after all, your pay slips show that deductions were being taken from your pay to pay your tax and NI. Uou can ask them to credit you with the amounts as shown on your pay slip, which would bring your tax and NI records up to date.

If the company is dissolved then you have no recourse against it - it would have to be restored to the register by a Court before any Insolvency action could be taken. If there are no assets it simply isn’t worth the time and expense.
Unless HMRC decide to make the (former) directors personally liable.
