Tenancy agreement confusion

Hi everyone, I was wondering if someone could offer some advice, please. Sorry for a long post!
So far we've had a fixed term tenancy agreement, which is ending on the 31th of December. We informed the landlord that we don't want to sign a new 1 year contract because we want to leave, although we haven't given him formal notice yet. We agreed that we will think about it and let him know if we want to leave end of January or end of February. However, my understanding is, from January we will start a periodic tenancy that rolls month to month, I am wondering, which notice period do we have to follow? In our fix term agreement, we had a 1 month notice period, but am I right that in the periodic one it's 2 months? which will apply to us if we give notice before the 31 of December? Another thing is that the landlord insists that if we want to stay 2 more months (January, February), we have to accept the rent rise which we are not happy with ( one of the reasons we are moving out). Is he right? Also, when we moved in 3.5 years ago he used one company to protect our deposit, but after a year I got a letter from them stating that our deposit is no longer protected. I asked our landlord and he said "don't worry, your deposit is protected, I used a different company" but we never saw any evidence of this and we don't know which company it is. Is this ok for him to do that or should he have give us all the details when he changed the companies? One last thing, ever since we mentioned to him on Sunday evening that we will be moving out he keeps calling and texting both myself and my husband, telling us that we have to tell him when we want to move out. I keep saying that we will give him a formal notice once we decide and we won't keep him in the dark for long but it seems like he didn't hear that at all. He also asked us to declutter the house so he can show it's spacious during the viewings- we didn't agree but he kept insisting. He said he wanted to come again this week, didn't specify the date or time, I asked him when, his reply was that we need to be flexible. I also suspect that he will want to do some repairs before the viewings ( eg very bad mould he didn't bother to deal with for the last 2.5 years despite us asking him to). Where do we stand with this? To be honest, we already feel that he is pushing us way too much and are not comfortable with this at all, but also we don't want to fight with him as it will bring no good for both sides.
