I am a full-time student but have been offered 30 hours of work paid £25 per hour over the Christmas period on a freelance basis.
Can anyone advise if I need to complete a self assessment form for this? Does it need declaring? What is the threshold for when you need to declare earnings?

If it's truly self employed work, you need to declare the work if you earn over £1k. Below this you can use the £1k trading allowance to take your taxable profit to zero.

Okay so this will only be £750. I presume it is "self-employed" - it is freelance writing. However, I will be starting full-time employment hopefully in March 2020 when my course comes to an end. Therefore does this mean I will need to declare it as I will start being taxed from March 2020?0

during that period you are allowed to have a total income of up to £12,500 without having to pay income tax (ie your "personal allowance")
so when you start FT employment unless you have had lost of temp jobs between those dates and other self employment income, it appears unlikely you will have exceeded the tax threshold and therefore will not have to declare the £750
please educate yourself by reading the following links on how tax works when you start employment, it will explain why you will not be paying tax in March 2020 for example if you provide the correct info to your new employer when you start with them
