Just after some advice. Several weeks ago I parked in St Peter's Way in Northampton which is run by NCP and foolishly I completely forgot to get a pay and display ticket which would have cost me 70p as I was focused on just rushing into a shop and getting back out again.
I've now had a letter asking me to pay up for £100 or £60 if I do it within 2 weeks. This seems ridiculous for a few minutes of parking. Having read up a little I'm more inclinded to ignore this but I just wanted to check what to do?

You need to read the NEWBIES FAQ sticky, post #1 to get you started on the process. But you'll need to find technical/legal reasons to avoid the charge. Ignoring is the last thing you should be doing, it won't go away, the costs will increase and you face court proceedings against you - with real financial risks if you ignore that too.
Winging a freebie parking spot 'just for a few minutes' is a very dangerous strategy these days - as you are discovering.Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .

The advice to ignore has not been given here since the law changed in 2012.
Edit your post to remove information about who did what. Only ever refer to The Driver and The Keeper, who are two different people.
The keeper has protections in law that the driver does not.
Start by reading the sticky thread for NEWBIES then send the appeal template in blue text you will find there in post 1.
If/when it is rejected, make a second stage appeal to PoPLA.
Get pics of the site and signage in readiness for PoPLA.

Come back when you've appealed using the template in the NEWBIES thread.
Why not just park on street to go to a shop. Why the car park, why do people do this? I was in Bristol this weekend and the person I was with actually tried to point me to a CAR PARK on a Sunday...my goodness why, when the street is free?!
