Not happy with kitchen fitter

If you've booked the fitter for a certain period, he's booked his availibity for then- then you've sent him away.
No wonder he's aggrieved.
I'd get a third opinion0 -
It was agreed before he started work that he would need to come back after we had fitted the flooring so we didn’t just ‘send him away’.0

Write to the first fitter setting out what corrective works need to take place and what you expect him to do for the money he's had. You need to give him the opportunity to correct his work. Set him a deadline and say that if he doesn't meet that, then you will employ another fitter to correct the work and pursue him for the cost of doing so.
You need to make sure you've got proper records in case this ends up in court. "We've probably paid him 90% of the cost (about £2,000)" is very vague and suggests that either this was a very informal agreement or you don't have an accurate grasp of what's been spent, what's been paid, etc.0
