Semolina pudding curdled

Hi,
I though I'd be very MS tonight and do us some semolina pudding in the oven at the same time as the shepherds pie.
I made it exactly as per instructions. Milk and semolina freshly bought today.
However the result after 30 minutes in the oven was very unappetising and had to be binned.

Not sure what went wrong, any ideas please?

    noonesperfect, maybe you could post the recipe? It is defficult to advise if one's unaware what you have really done. Maybe you added some lemon juice to the mix that caused the curdling?
  • 1pt milk 2oz semolina, mix in a saucepan. Bring to the boil, stirring. Lower heat and simmer gently for 2 mins stirring occasionally. Take off the heat. Stir in 1oz sugar. Pour into an ovenproof dish and cook in oven for 30 mins. 180C

    Nothing more, nothing less

    You wouldn't think it was possible to go wrong! I would normally consider myself a competant cook, now I'm not sure.......

    was the milk slightly off maybe, thats all i can think of sorry

    i have never done mine in the oven either
    its just as easy in a pan
  • I never put my semolina in the oven. I just make it on the stove top,once it's thickened and you add the sugar,lower the heat a little &just cook for a couple of mins more stirring all the time and then serve into bowls and put a blob of strawberry jam in the middle,it's lovely.I tried doing mine in the oven at first and it was vile

    Me neither, Rowntrees used to do something called Creamola which was as easy as falling off a log. All you had to do was mix it with milk, bring it to the boil (stirring all the time simmer it for 2 or 3 mins and it was ready)
    Nup the milk was fine, had just bought it fresh that morning, just coming to the end of the bottle now in fact.

    That's what I'll do in future, the instructions didn't include stove-top, just microwave and oven. I love semolina in winter with a blob of jam (might be homemade plum in my case tho!)

  • Yup - sounds as though the milk split, probably because it was on the edge of just going off. You know that time when it still smells OK, but curdles as soon as it hits heat. This even happens when you add it to a cup of tea or coffee. Something to do with the proteins breaking down, which is made worse by the heat.

    Bad luck, I'd suggest as it should work in the oven and just means that you don't need to stand over it.

    no it's doesn't say it on the pack, but it's just the same timewise as making cremola really 2-3 mins and it's done, no need for the oven. I'll have to have some semolina tonight now:D
