I'm not sure the OP has got the right impression of what S75 is all about. It's not a routine use of a credit card, so I'm not surprised there isn't an easy online way to do it.
I would say you'd need to use S75 about as often as you need to take a company to Small Claims Court to recover money, which for most people would likely be never in their lifetime.
In common with other posters here, I've never needed S75 nor Chargeback, and I've been a credit card user for 25 years.0 -

I think what @chattychappy is trying to say is that you can choose to pursue a S75 claim against issuer/retailer using an online process if you wish to take it through the courts from the start - and no internal card issuer processes can be allowed to interfere with that legal right.
Most cardholders will shy away from legal action (as it will seem complicated and costly) when they can get a reasonably balanced view from their card company and can usually expect to be treated fairly when asking them to pay out without the need to go to court.0 -

Some time ago now, but I pretty much got fedup of the faff with Nationwide and the obstruction from Currys and went for a small claim with them both as defendants. It would be interesting to understand what kind of dispute/claims you deal with.
I agree s75s Make up a small % of overall claims but perhaps not as small as your experience says.0
