Euro Car Parks - Parking charge notice for not paying - will an appeal be successful?

Hello there please help.
I parked my wifes car on a Euro Car Parks car park in Walsall town centre (TGI Fridays) a few weeks ago and must have completely missed the signs and not paid and displayed as a result of which my wife has received a parking charge notice through the post for £100 but if paid within 14 days then it's £60. There is a number plate image displayed in the letter to show and entrance time and exit time but this shows the number plate only and not the whole car.
I'm really annoyed about this as i normally see the signs and pay and display but must have been day dreaming on this particular day as i have been back to the car park and there is clear signage explaining that you must pay and display.
I'm looking for help with if an appeal is likely to be successful in any way being as i didn't pay at all. I had something similar to this a few years ago for being over on time which i appealed successfully but i can't find much information for not paying at all. I'm hoping there is a way as i don't want to pay this. not sure if the fact that i was driving my wife's car is any help although the letter clearly states that if the registered keeper was not the driver then they should nominate who the driver was or else the charge will be pursued back onto the registered keeper.

Edit your post to remove information about who did what, and who parked. Only ever refer to The Driver and The Keeper, who are two different people.
Do this before you do anything else. Parking companies read this forum.
Nobody can guarantee yo will win at appeal, but I can guarantee you will lose if you don't appeal.
