How do I know whether to use a section 75 or charge back to claim a partial refund for a poor install service of kitchen worktops?

A chargeback can be contested by the company who you paid. For that reason you are probably best going down S75 route. Either way you are going to need solid evidence.0

Speak to your card provider.
If there is a chance of a chargeback they will action that. You do not get to choose which route is taken.

The bank may misunderstand (whether on purpose or due to ignorance of their staff I don't know, but I've never known them to do it the other way around) and attempt a chargeback rather than a s75 claim but you don't have to accept it. You do have the right to either option.
If s75 is available then that is always the route to go as it makes the creditor jointly & severally liable. Meaning you can claim against one, the other or both (but not as to recover the same loss twice). It also covers damages (even in excess of the amount paid or contract price) while chargeback only covers the amount paid. And is available where there is a breach of contract while chargeback is only allowed for reasons predefined by visa/mastercard etc.You keep using that word.
