We are going on holiday soon and wondered if anyone can help, we take lots of photos on the phone and wondered if we could buy an adapter to transfer the pictures from the phone to an adaptor, then when we get home plug the adapter into the laptop to transfer all pictures.

no need for adaptor or leads.
Install 'Google photos' on phone.
Then simply log into google photos on laptop and download0 -
If you have any reason not to trust the Internet access (China etc) you may want to take a tablet that will let you copy from phone to have hard disk.
(I’d then worry the disk might get damaged.)

Yes - just use google photos to upload the pictures to the cloud (good idea for back up too).
(You can get other apps to put them into different cloud storages, if you're on a iPhone then your pictures are probably already on the iCloud anyway. There is also a way to do it for Microsoft OneDrive, and if you're using a kindle type device your pictures are uploaded to Amazon cloud.)
On the laptop end, install the companion google/onedrive/iCloud photo app, furnish that with your login and it will automatically download them to your computer in the background and you'll have a folder on your PC that has all the pics you've taken.(Although I could be wrong, I often am.)0 -

If you then delete the photos from the phone because storage is low will they stay on Google Photos?0

You can choose to do this with Google Photos. It requires a fairly good WiFi connection (or a good 4G connection, if your data plan can stand it). The photos back up to the Google Cloud where you can view them, and download again to any suitable device. You need to choose the option for "full size backups" - otherwise quality may suffer. You can also choose to delete photos from your phone, if they have been successfuly backed-up. You need to read up on the Google Photos app.0
