Even if you had and been given leave to appeal, what would be your points for any appeal.  As @Redx posted, did the judge err in law?  Seems, from what you wrote that it was a matter of interpretation or opinion on whether or not the signs were adequate.

No appeal was mentioned in the call. I didn't realize I had to mention it.
It would unlikely to be 'mentioned', you'd need to ask for permission to appeal, but you'd need more grounds than not being happy with the decision. It's not easy, but drawing a line under it hopefully allows things to move on.

I'm sure you won't get caught out again any time soon. Why not come back to the forum in a couple of weeks time when the draft mandatory private parking Code of Practice should be open for comments. Let the Government have the benefit of your experience at the hands of this scamdustry.
Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .

I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

You can only appeal if you have grounds to show that a Judge erred in law.  Sorry to say but if he looked at all evidence and decided that the signs were adequate, another Judge is not likely to go behind that unless he was wrong and the signs were very clearly not adequate.

Well this has been a complete waste of time and now money and I'm probably worse off now. I don't see how anyone can fight these in the first place now.

    Was landowner authority covered?

It doesn't assist you but 99% of people here win at hearings (have done since 2016) and rarely are signs considered 'adequate'. You were either unlucky with the Judge or unlucky with very clear signs.  If the signs were clear, then things like the landowner authority contract, usually cause the PPC to slip up.

Which court and Judge, please?  Sometimes you just get bad luck of the draw and a Judge who doesn't realise the scammery.

When you came here in October last year the court claim had already been issued , so you had little choice at that point

This PCN should have been appealed within 28 days of its issue , then appealed at Popla , not left until a court claim was issued
