    Oh I'm loving the foil Roasting trays idea because I so hate scrubbing Roasting Tins on the day

    Christmas Eve: Boeuf Bourgignon,Roast Potatoes and Broccoli.I love this meal because Its a real shove it in the oven and forget about it meal:rotfl:

    Christmas Day Breakfast is always a mixture of toasted currant teacakes,Croissant,Pain Au Chocolat and fruit juice.Basically its food the kids can hold and eat whilst opening their prezzies

    Christmas Lunch is always served at 1pm so that I can get the cooking and washing up out of the way and enjoy the rest of the day without the hassle.

    I am serving Pate and toast as the starter

    followed by Roast Turkey and all the trimmings

    Trifle for dessert


    After that the kitchen closes and any hunger pangs must be satisfied with the pile of HM sausage Rolls,cooked meats and salads that the fridge is crammed with

    We had goose for new year's day last year (from aldi, cost around £12). It was delicious and as I had been forwarned, I collected over a litre of goosefat (after seperating it from the juices and straining it etc). We were having roasties done in goose fat until August when we noticed that the fat was starting to go a bit mouldy and ended up binning over half of it. Next time we have one I will batch the fat up and freeze it because it made the tastiest roasties ever.

    It's interesting that noone is doing anything much with game or fish apart from the odd bit of salmon.
  • Its been lovely reading everyone's xmas menus! Its getting me feeling all christmassy :j This year will be my first cooking for my family, last year was DD's first christmas and we spent it at grandparents, but this year it will just be us, I'm so excited! This is what I'm planning:

    Christmas Eve : Chinese Takeaway - its what I always had growing up and I will be carrying on the tradition for me and H at least, DD is only 18 months so might keep her away from the MSG for a couple of years yet!

    Christmas Breakfast: Scrambled egg, sausages and toast with some really nice coffee

    Christmas dinner: Prawn Cocktail for me and DD (its not naff, its vintage!)
    Soup for H
    Roast chicken, roast beef, roast potatoes, pigs in blankets, stuffing, yorkshires, sprouts, peas, carrots. We always had picked onions and gherkins too so will be putting those out too!
    Dessert: Xmas pudding, Cream, Pavlova

    Christmas Tea: Salmon and cucumber sandwiches, mince pies and cream, Christmas cake and whatever else can be picked out of the fridge and all served buffet style.


    On Boxing day we will have cold meat, mashed potato, veg and piccalilli

    This how I do mine
    heat up some olive oil in roasting dish (200degree in my fan oven for about 8mins)
    Par boil potatoes, drain, add tablespoon of dry semolina to thw pot, shake potatos around in this to get them covered
    tip out potatoes into roasting dish, drizzle some more oil over them, not too much, roast as normal (i turn down oven temp to about 180)

    Sandy2 You turn your oven down? In the quest for greater crispiness I have been turning mine up.....now you've got me thinking. I did the semolina trick a while back but it made mine a bit too crunchy. Maybe I overdid it, I tend to use a lumphammer to knock in a tack:-)

    i saw some in Asda where all the herbs and spices were.....have never tried them so not sure what they are like.
