When he does, you will inherit what's left of his estate after the debts have been settled from his assets - unless he's made a will in favour of his (now-ex-)partner. I presume you're expecting to be executor?0 -

Do you literally mean "inheriting" as in "what happens after your son dies"? As already explained, debts don't get "inherited".
Or do you think you might be lumbered with it for some other reason e.g. are you a guarantor?0 -

With respect you only asked one clear question in your intial post, which linked to an earlier comment (both emboldened for clarity). It wasn't at all clear that you were seeking advice on inheriting debt.as his parent it grates me hugely that i feel hes being mugged off and been used just so she could acquire a bigger house (telling signs from history and friends info)
god forbid anything happen to him she will end up with a large house all paid for or a worry for me she doesnt pay and I as parent end up with half a house debt to inherit.
can this happen and what would need to be put in place to stop that happening in gthe mean time.
can he assign the life policy away from her?

He still jointly owns the property so should quite rightly continue to pay his half of the mortgage and buildings insurance.
His ex should be paying him some form of rent for his half of the house until it is sold.
This is really something that your son needs to be sorting out and coming to an arrangement with his ex.
With regards to the rest of your post i'm not sure what you mean by she is 'mugging him off to acquire a bigger house'. In what way is she doing that?0 -
I can give you a story from the other side where I was left with the house while my ex lived rent free at his mums?
She wasn't shy about giving me her opinion which only led to more ill feeling between me and my ex.0
