Doors and frames painting problem

I had new doors and door frames / architrave fitted upstairs and am finding them a nightmare to paint.
I made the mistake of having bare wood frames etc (complete with knots) which I have undercoated and sanded 3 times and the wood is still showing through.
I used that stuff on the knots first and then a primer and everytime I put a coat on it roughs the wood up again and I have to re- sand.
Same with the edge of the doors (pre-moulded)
I have done my own painting for years and am quite good at it but this has got me stumped, I feel like I am painting the forth bridge and will never get to the point of actually glossing.
Any advice appreciated!

Is there any way round having to sand after every coat?0 -
Presume you’re using water based paint ant it’s raising the grain. Try 2 coats with no sanding then the lightest sand possible before gloss.0

Thanks! Seems pretty obvious now that it is the water content in the undercoat. Will do what you advise.
The gloss I have is not water based so imagine that will be ok.0
