I've found out how to create my account. I've left my job but the website doesn't allow me to confirm I've left the job until 5th Sept 2019.

I trust come that day I can input my new employment status? Plus remove this recent employment.

It sounds like you are worrying unecessarily about this.

Assuming the website you are referring to is gov.uk and your Personal Tax Account then you shouldn't need to make any changes.

Your old employer will notify HMRC that your employment has ended when they report your final wages/salary payment to HMRC.

Your new employer will notify HMRC that you have started work for them when they report your first wages/salary payment to HMRC.

You shouldn't "remove" the old employment. Fact is you have worked for them in the current tax year.

Has the old employer given you your P45? Hand that to the new employer once received. As Dazed says nothing for you to do. It's all done electronically by the employers.
