Overstayed in shopping park car park

Hi,
I have read the newbies thread and advice but still need some help.
Returning from a holiday (17.7.- 3.8.), I found a letter at home dated 18.7.. It says it is a Charge Notice Reminder and that there was a Notice on 1.7. but I never received that one.
It further informs me that on 22.6. I stayed at Borehamwood Shopping Park for 3 hours and 14 mins and therefore overstayed (I don't know if the limit is 2 or 3 hours).
I understand from the Newbies Thread that I should appeal as the keeper and should not admit who drove. I also understand I should get in touch with the shops as they may be able to ask Highview to void the fine. But when contacting the shops, wouldn't this be admitting who the driver is? Or does it not matter when speaking to the shops as long as I don't tell Highview?
On the day of the event, I visited the shopping park with my husband who is registered blind and my two young children (3 and 1 at the time). My husband paid in 4 shops using his bank card, so we have 4 transactions that prove we were actual customers.
And what about missing the deadlines? And not receiving their initial charge notice? How does this affect the appeals process?
I hope you can help me out and it is not too late to appeal.

Yes send the BLUE template appeal from the NEWBIES as keeper.
Highview generally fold on seeing the template so always worth sending.
If the appeal page isn’t available just use another HV email.0 -

Or even just 'we'. The Registered Keeper sends the appeal, they send the complaint too. Obviously there was a driver but there's no need to identify them .... it's 'the driver parked in ...' etc.0 -
