Removing & replacing slabs in small garden

Looking to remove the old slabs in our garden. Its a very small area (approx 5m x 3m)
The slabs are on the raised part of the garden - about 6" high and the plan is to remove the slabs and remove whatever is under them so that the ground is level with the rest of the garden.
It's a DIY project so no time pressure to get it done. We'll do whatever we can whenever we can. It'll all be done manually by hand! No diggers etc etc
Once all removed and level, we plan to put on newer, thinner slabs.
what should we look out for? / how do we prepare the ground before the new slabs go on? / weed control etc etc etc
Thanks
(I've attached a few images of garden/slabs etc)

Hi,
here's the pics for you,0 -
The is a chance the is already concrete under it, so you would just need to bed them down.
Is the a gate to move it all to the skip?0 -
The concrete under the existing slabs it will need to be broken and removed if you want new slabs to be on the same level as the rest of it.
Once the concrete has been removed you can use sharp sand and a good weed control fabric to lay the new slabs onto.0
