ParkingEye Claim Form Assistance

Hello,
I received a few letters from ParkingEye back in March/April including a LBCCC which I ignored as I was told by everyone "you don't have to pay private parking fines". I've just received a County Court Business Centre Claim Form which has finally struck some alarm bells so I decided to do some research.
I've submitted my AoS on MCOL to buy me some more time to get my defence together.
PoC:
"Claim for monies outstanding from the defendant, in relation to a Parking Charge, issued 28/03/2019, for parking on private land in breach of the T+C's (the contract). ParkingEye's ANPR system, monitoring Gravel Beacon Road Bournemouth, Marriott Hotels - Bournemouth Highcliff, Marriott Hotel Car Park, BH2 5DU, captured vehicle [XXXXXXXX] entering and leaving without without a valid paid parking ticket. The signage, clearly displayed at the entrance and throughout the the car park, states this is private land, is managed by ParkingEye Ltd, and is a paid parking site, along with other T+C's by which those who park on site agree to be bound. In accordance with the T+C's set out in the signage, the Parking Charge became payable. The defendant was previously presented with the opportunity to take their appeal to POPLA, the independent appeals service for parking on private land, but this has not been taken. This claim is in reference to Parking Charge(s) [XXXXXX/XXXXXX]".
So in actuality, I pulled into the car park and watched the seafront and talked with my other half. We didn't even leave the vehicle. In the LBC it states that I was in the car park for 38 minutes, which is not included in the PoC above.
Now, on paper I'm not sure if 'I didn't leave my vehicle and I was only in there for 38 minutes' is enough to cut it. I wanted to just check the best way to approach this before starting my draft.

the vehicle was "on site" for those observation times (without permission)
they monitor vehicles, not people
its irrelevant if anyone got out or not
email a SAR to the DPO at PE for all their docs, pics and data, with a picture or scan of the N1 claim form or V5C as proof of ID for GDPR

That defence of not leaving the vehicle won't help! It was parked!

You could try complaining to Marriott Head Office to see if they will support you at all, in which case you might consider making an offer of £50 or less to P/E, and see how they counter it:

I do not see your defence unless the signs were terrible and it was dark/unlit on arrival.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
