I’ve noticed that over this past while sites are advising me of their cookie policy and in a lot of cases I seem to be able to deselect them. However, I can’t, deselect them all. It can also be a pain to get through to their deselect button!
What if I go to settings (iPhone/iPad) Safari select Clear History And Website Data will that delete all the information that’s been placed on my iPad in this and past visits. What happens to it?
Also I’ve asked myself the question is it really worth bothering about these cookies because, well, they’ll get their information in the long run anyway

All that happens if you clear history and cookies on your device is that the sites you visit will wave "consent" buttons in your face when you visit them again.
The majority of cookies are primarily to build up a history of how you use the site, what you click on, what you look at, and the basics of the computer configuration you use (screen resolution, browser, operating system etc). However other cookies remember you if you tell the site to keep you logged in.0 -
Choice is keep cookies on your system Or have to tick cookie policy .

Imo its not worth the time so i just agree to everything. T&Cs are a similar problem. Some cookies “follow you”, which is why you might see unexpected adverts... for example I was looking up Tektronix oscilloscopes and then visited a local newspaper web site, lo and behold an advert for Tektronix appeared on the site!
I regularly wipe cookies and cache, in addition I use ad blockers and set Firefox to use DNS lookup via HTTPS (stops your ISP logging your web browsing).0 -

Ad-blockers block third-part tracking and advertising sites, which improves privacy without having to fiddle with site-specific cookie settings.
I'm not sure what ad-blockers are available for iPhones, though, or whether you'd need to "jailbreak" the phone.0 -
Their is probably an option to delete all cookies apart from a white list when you close the browser.0

There are several in the iPhone App Store, not hard to find. Search Adblock.
The iOS Firefox browser has a private mode that doesn’t save cookies, handy to stop adverts following you from site to site...
Only a fool jailbreaks their phone, Apple security is pretty tight, why open up your phone to hackers?0
