Hmmm - a SAR can take upto 30 days which probably won't give me enough time.

I will issue a SAR first before completing the AoS.
Did you read my earlier post?

you have until Monday 15th July to do the Acknowledgement of Service, but there is nothing to be gained by delaying it.

AoS Submitted - I will start my defence letter now. The only problem is it was 4 years ago and I have practically zero recollection of it. Signs, times etc. Really not sure where to start.

A SAR will supply the photos & letters.

Email that tonight if you haven't already (see NEWBIES thread about a SAR) and it may or may not come back in time for defence. If not, it will be helpful at WS & evidence stage.

It is unlikely to take 30 days, IMHO.
PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
