Proving self-employment at time of sale for PPI product

Hi there,
Capital One have requested that I provide proof of self-employment at the time of taking out a credit card with them, that I have recently discovered included a PPI product. The date in question is August 2005, almost 14 years ago.
Could anyone advise to what would qualify as proof of self-employment?
I logged in to the HMRC website to find previous years self-assessment returns, but unfortunately they only seem to have online records dating back to the 2006/2007 tax year, where the date in question would fall into the 2005/2006 tax year. I do have my own record of submission receipt reference numbers (IR Mark?) for earlier years, but I can't imagine a reference number is enough information for Capital One to work with.
I will phone HMRC support to request copies of relevant information but I'm not quite sure what to ask for. Is a self-assessment form for the year in question be enough, or should I be requesting something else? Maybe a National Insurance statement?

I was in the queue to Capital One's helpline as I typed this, but have now spoken to someone. To be honest, they were rather vague in their reply, as if it's something they hadn't been asked before which seems hard to believe. They initially said, "anything that proves I was self-employed", which I said was a bit vague and could they give me any more details. I mentioned I had Self-Assessment submission receipt reference numbers for the 2005/2006 tax year, and after being put on hold for a couple of minutes whilst he spoke to someone else, he said that would be enough for them to work with and they could enquire for more information if needed.
Your advice of the more, the better, makes good sense, thank you. The trouble is that being 14 years ago, I really have very little paperwork from that period. I'm going to contact HMRC this afternoon and ask if they can provide any further information.0
