Large family caravan meals

Hey

My family are going for a caravan holiday next week, we are all taking turns to make a meal one night, only 4 nights, we will be eating out the last night. I am wondering what to make, meals already decided are Chlli and spaghetti meatballs. There will be 11 of us (split over 3 caravans :p ) Any ideas on easy large meals? I don't like using jars of sauce, looking for something easy, with not too many ingredients. Any ideas? :)

    What cooking facilities will you have?

    What cooking facilities will you have?

    We will have an oven and hob, sorry, I never explained, its a large static caravan, so proper kitchen.

    I went for a weekend away with a car group, about 30 of us, only one caravan and the owners were cooking for everyone. If they did it your group can easily do it.
    Mortgage started 2020, aiming to clear 31/12/2029.

    Yeah, we'll manage fine, always had a big family so nothing new :) just looking for good meal ideas for inspiration. Was thinking of curry, but don't want something that has too many ingredients

    Carbonara

    Cook your pasta.

    Mix together eggs, double cream and hard cheese.

    Fry some lardons/bacon or use ham.

    Take pasta off hob and drain, then mix it all together. Garlic bread as a side.

    How about home made pizza using a pizza base, a spread of passata then cheese, pepperoni, peppers etc. with garlic bread and salad.

    Campfire stew - if you have a big slow cooker you can take this can be left to it's own devices while you have fun.
    This should feed 11 (at least)
    1.5 kg Gammon joint chopped into chunks.

    1kg cooked sausages - the packs of cocktail sausages are brilliant for this. Or raw ones skinned and in chunks/balls

    4 tins chopped tomatoes
    4 tins baked beans
    Onions, peppers, mushrooms chopped

    Large tin of sweetcorn
    Large tin of sliced carrots
    1kg Cooked or tinned spuds diced
    Garlic powder & mixed herbs (optional)


    Pop everything in the pot/slow cooker bar the sausages (if using cooked) and spuds.
    Cook on hob for around an hour or 4 -6 hours in the slow cooker. Add the spuds & cooked sausages around 1 hour if using a slow cooker or 15-20 mins if on the hob. Chilli or bbq sauce added is also good.
    Serve with crusty bread, grated cheese (optional) & salad.

    In static vans you normally get a full size oven, but if you are cooking for 11 you will need to consider taking bigger pans and oven trays as the cooking equipment provided is usually for 4 - 6 people.

    If you make your own fried onion/ spice base ahead of time that substantially reduces the ingredients and the cooking time.
