I'm going to do all my baking on Christmas Eve like I normally do.I've tried freezing cakes and IMO they always come out slightly rubbery and a little bland.This is the first year I havent made a fruit cake and done all the feeding etc.My lot just dont like fruit cake and it ends up with OH and me pigging the lot.So this year I'm going to make a sponge cake and decorate it with fancy Christmas icing.The kids will love it. I'm also going to have a bash at making Stollen we all love it and how hard can it be?

i never seem to have any room in my freezer! it is still full from the glut of apples and damsons:p
i will make some fruit loaves though as they can be kept in an air tight container so no need for freezer space..0 -
Can i make cookie dough and gingerbread men dough and put away to freeze to take out to use on Xmas eve this early? I like making cookies etc with my children Xmas eve but be easier if the dough is already to use.0

I've never really understood the purpose of bicarbonate of soda, but when the supermarkets didn't have it I skipped it.

next time you get some bicarb, put half a teaspoon in a glass of water. And watch what happens. Next time you make muffins, remember that what happens, happens inside your muffin mix. you just don't see it as clearly.
Its this that makes it rise.
