Christmas baking

I have spent the morning baking lemon muffins, scones, and bread to be frozen ready for Christmas, as i have people coming around from the 22nd of December right through to Boxing day.
I still have to make my Chocolate Christmas cake, mince pies, and welsh cakes.
I may do these tonight, and then freezer them once cooled.
Has anyone else started their Christmas baking yet?

I know i should have started baking does that count? The trouble with me is i seem to think that just because i have planned exactly what i intend to bake that means i've baked them!
However this post has given me the needed prod and the fruit is now soaking for the christmas cake .:j0 -

I am intrigued about freezing muffins, wonder how they come out? Seen that a few pople do it with lots of different cakes. I make batches of muffins but they tend to go stale before we finish them because its just me and OH and we don't eat them every day.
I will probably make lots of mince pies and bakewell tarts but I have to defrost my freezer first as its in a bit of a state.
I think I will do some individual steak and ale and chicken and mushroom pies for dinners when I can't be arsed cooking0 -
Well i figured if my mum could freeze 2 halves of a Victoria sponge when i was child, i could blooming well freeze muffins too :rotfl::rotfl:0

Muffins freeze as my mum makes them - she took some out the other day - apple and toffee ones (don't tell her but they tasted a bit bland
). Normally mum's cakes are really tasty but these weren't sweet just odd.

Oh dear! And there I was thinking I was being a bit premature about possibly starting my baking next week! To settle my mind, and with just over a month to do, could I have reassurance that the following items freeze OK!
I intend to do plain shortbread, plain scones, crumpets, mocha squares and cornflake crispies. These are all for when visitors may descend over the Christmas period.

nikib, the secret to great muffins is to have the oven hot, keep wet and dry ingredients seperate until the last minute and most importantly don't overmix. Lumpy with no flour-y bits showing is perfect. HTH0
