If you are employed on a self employed basis eg. When working as a childminding assistant, do you state that you are employed or self employed when updating your tax credits? If it meant you were classed as self employed, would it affect your tax credits in a negative way?

You can't be employed as self-employed - you are either employed or self-employed. You can't choose the status, neither can the person paying you, it is determined by the facts of the relationship between you.

You say you are a childminding assistant - do you work for one person? Can you send someone else if you don't want to go? Do you have more than one client? Do you have control over what work you do?
