Voucher for “experience” - no terms received and supplier says non refundable

I purchased a voucher for an experience right at the end of December 2017. My wife then found out she was pregnant, and since the experience involved alcohol, we held of using it until after the baby was born.
Now we have a very young child, it’s almost impossible to find someone who can look after her for a day whilst we take the experience, and so I wrote to the supplier explaining the problem.
They won’t extend the voucher unless I pay more.
They also won’t cancel the voucher and give me my money back.
They also won’t give me other products to the value from their store which I suggested.
The receipt says absolutely nothing about being non cancellable, non refundable.
What are my rights?

Give it to someone as a gift.
You say it doesn’t say it’s non refundable. I imagine it also doesn’t say that it is refundable if you have kids.
Either hire a babysitter or give it as a gift. I’m amazed that there is no one who can look after a child for a day. I thought some people with kids had jobs and stuff?!0 -
1. Yes, it’s a Gin tasting and making day.
2. Our child is currently teething, and not only would I not want to wish a day of dealing with her to anybody, I also wouldn’t be happy or enjoy the experience knowing how she currently is.
I did suggest that maybe they could simply send us a bottle of gin, instead of refunding the £145.00 cost for the days experience which I felt was a very fair compromise.

Just get a childminder or a friend to look after the baby and use the voucher.0

I don't think you have a right to any of the three options you suggest, you're reliant upon goodwill.
The best bet would be to find a way of using the voucher, or giving it to someone else, or possibly auctioning it to friends/family for charity? When does it expire?0 -
The company aren't bothered if you don't use the voucher as you have paid for it up front.
Can you find someone to care for your baby whilst you enjoy the day. Do you and your partner work? Who looks after the baby on those days?Thrifty Till 50 Then Spend Till the End

How about you look after your daughter for the day and let your wife go with a friend or relative? Although looking at that site vouchers are only valid for 12 months so if you bought it in December 2017 then you are already too late to use it without paying more.0

One of you could go with a friend or relative or even alone.
The company isn't at fault much as you want it to be - 12m is a very reasonable period for use and it looks like they already agreed to extend it based on it originally expiring 4m ago. You are reliant on goodwill for concessions and as its gone on for such a long time not sure you will get any further. I'm not even sure you should - its entirely down to you why you haven't used it.
You COULD make use of the voucher in some way but don't want to for some reason eg you'd rather have a bottle of gin than let someone else go or just one of you?0
