under GDPR there should be proof attached so they know it came from the defendant and not from anyone else
putting her name at the bottom of an email is not "signing it"

you should do what I said earlier, as a one shot deal
if I were you I would have set up a new gmail email address in her name (note :- in HER name) , then YOU email it from HER email address and attach a copy of the N1 claim form as proof of ID, or a copy of her V5C if she still has it
you could even get her to print and sign a piece of paper with her name on it , date it , take a picture of it and attach that as well, as a digital signature (google it)
if your email was used, they know its not from her, besides which you dont appear to have attached any proof, so under GDPR (DPA) they have to reject it0 -

yes you can , but can you also attach a copy of the V5C and/or the N1 claim form with her name and address on it as well ?0

Maybe they are uncomfortable that the email addy itself is 'you@' rather then 'her@'?
You need to reply as her again and state that this email address is my only email access as I am elderly, but here is the proof this is me, the Defendant. And if you object to replying to me by email, I will consider a swift reply by post to my service address.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
