Plenty of dodges if people want, inevitably though at some point HMRC will catch up.... Unless its a tiny job Id generally wouldn't pay by cash....There was more reason 20 years ago as if someone was unknown you may not want to wait 5 working days for a cheque to clear, these days BACs or even card which even to an individual accepting a debit card is cheaper than handling and paying in cash.
I had someone sub for me a couple of years back he wanted me to pay him every Friday and the draw Cash out to pay his labours... He was surprised to learn that outside the building trade neither weekly or cash payments at 3 o'clock on the Friday were not the norm....0
