            He owes me a lot of money, for long over due debts, he has gone back on payment agreements. Pursuing this is a justifiable court case to me, as it would be to most in my position0

            For the benefit of anyone arriving via google with a similar question, I have since confirmed I think you cannot charge interest on parts of the debt that have been repaid prior to proceedings:

 "Interest may be awarded “on all or any part of the debt or damages in respect of which judgment is given, or payment is made before judgment”, but no statutory interest is recoverable where a debt is paid late, but before issue of proceedings."0
