Can I have car insurance at a different address

Evening everyone,

Long story short, I lived with my mum and my insurance renewal quote was £900, I recently moved in with my girlfriend which is literally 1 minute away from my mums house and the cheapest quote is £1400, so £500 difference for being 1 minute away.

Now... I'm a named occupier at my girlfriends flat and I'll be paying council tax at this address but cant I just leave the insurance under my mums flat and leave my licence, bank statements etc... all under that address? I mean for the sake of £500 I'll just leave the car there on a driveway.
