Underlay debate

Hi, I am wondering if anyone can help.
We are choosing between 11mm cloud 9 underlay or 9mm underlay and can’t decide which is best to do the whole house, bedrooms, stairs - the lot. We have a 12mm action carpet to go on top which is quite a nice quality. We wouldn’t consider other brands etc now as we have had the samples and are happy.
We spoke to our fitter and he says it doesn’t make too much difference apart from the doors will need to be trimmed for the 11mm. The cost difference isn’t massive and as we’re doing the whole house we wanted it to be nice so would prefer the 11mm but not sure if it’s completly practicle.
Will we notice the difference? Is 11mm too thick throughout?

We were advised not to get the thickest on our stairs. I suppose thecwear/indentations would be more noticeable.
We have 11 or 12 in bedrooms and 9 on the stairs.0
