Apply to have Order stayed to submit amended defence

Hello
This is my first post having looked around to see if Q has been answered already.
The situation is this
I have rec'd photo evidence of my car leaving the car park 20 mins past the "permitted" stay time of 180 minutes.
Pretty much ignored everything correspondence wise until court documents started coming through the door, which I have acknowledged.
Unfortunately I didn't read around on here enough and submitted a very flimsy defence via email.
I am now at the point where I am being asked to file Directions Questionnaire with CCBC. I will do this. The wording on the "General Form of Judgement or Order" suggests I can also apply for the order to be stayed.
3 Qs
1. Can I do this and file an amended defence
2. Is it worth it (thinking cost and will it increase chance of success that much)
3. If it is possible, how do I do this
Main thrust of defence would be to really focus on 20 minutes and referring to Kelvin Reynolds as well as CoP re grace period. I do not have any photos of signage at the time so that element is a dead end.
At the moment I've referred to the 20 mins but w/out much substance. I've also said fine is not appropriate given 20 mins.
My understanding is that all I have left now is the Witness Statement which has it's limitations as I can't elaborate on / embellish my defence as my understanding is that this is more along the lines of stating facts rather than argument.
Apologies if I'm not divulging enough info at moment but cautious not to reveal too much.
