Can't update or restore iPhone. iTunes is a joke!

Trying to now restore an iPhone to factory settings just to update it as i can no longer update directly (apparently) yet i just get error message after error message when trying to restore it.
In fact this has been going on for a long long time with iTunes, at least in my experience.

Trying to update more than 2 apps at a time.
iTunes has a hissy fit on each. Eventually it usually works after trying and trying and trying and days/weeks later you get your desired result after trying 101 ways.
Tried updating via a Mac this time to see if it'd help. This seemed to lock the phone in to (DFU?) mode - where there's a picture of a cable and iTunes symbol. It'll flit between that and just the black apple logo on a white screen.
This whole inability to do anything with the phone as far as iTunes goes is very annoying. Any idea how to restore the phone now?

For future reference i was able to get out of recovery mode using iMazing.
Still can't update the damn thing though. Even through iMazing.0 -

When you plugged your iPhone to your Mac , did you look at the iTunes preferences where it lists what device is plugged in?
( for example , when you plug your phone into your Mac if you want to browse/ change your music library).
Is the iTunes in your iPhone the same version as your Mac ?
What model is your iPhone ? What version of iTunes are you using on Mac and phone ?
Have you tried pressing the button on your phone with the power button at the same time ?0
