I know you have mentioned 4 destinations you wouldn’t consider, but i really would say Turkey is brilliant in my opinion. I went last year for the first time with a friend and I can honestly say the hotel was on a par with the Caribbean hotels we have stayed in and we were treated like royalty. We loved it so much we are going back (to another hotel) this year.
Whilst I can’t comment on Egypt and Tunisia as they aren’t somewhere I fancy myself I really would suggest being open minded about destinations and instead consider things like facilities, weather and price when they are announced.
As others have said, having a few days flexibility each side of your week off may help a little as well as considering flying from a range of airports rather than your local.0
