My partner is moving from car insurance to van insurance, he's filled in all the details correctly including his double barreled surname (we will say Smith-Jones for example).. £903, then he entered his surname again but only using his second surname Jones (not the first bit of the double barrel) £766 so he entered the same again only his two surnames with the hyphen in between Smith Jones £515, so my question is.. With it being almost £400 a year for the - in his surname.. If he takes the cheapest quote will his insurance still be valid?

Just fill in the form correctly as even a day's error in the date of birth can make a difference (so I'm told by insurer but think they were trying it on). Anyway he needs insurance for his correct legal name. It's hard to believe a name difference will make £400 difference unless he has some record of financial wrongs that is triggered by using the correct name?0

Intentionally missleading the Insurers can allow the Insurer to void your policy.
Be aware that the various quotes he has obtained are logged by many Insurers. Some of them will refer to them shortly after the policy is taken out and make further enquires, some will only refer to them in the event and some will not refer to them at all. But a digital trail is left of the various quotes0
