Granite undermount sinks

I am looking to replace worktops with quartz and as part of that I am looking at white granite undermount sinks
There is a lot of choice from Blanco over £500 to Caple around £200 and Rangemaster ad Franke in between and then Elleci Reginox etc
i am told they are all similar and around 80% quartz comoposition - if that is the case are you just paying for the name and should i just go for the cheapest out of these that has the size and style i want?
Also will white granite stain with tea coffee and food etc or with proper care is that not a problem
I would appreciate any advice

We fitted a new kitchen with white Blanco under mounted sink. After a year a yellow "stain" appeared and we found it impossible to shift. We complained to the kitchen installer. They said this was not possible and gave us Blanco's cleaning guide - Bar Keepers Friend made no difference.
Blanco rep came and spend an hour trying to remove the "stain" - no difference.
Blanco guarantee their product will not stain. We got a free replacement, but had to pay for installation.
We chose a coloured sink. On the plus side, it was nice to have a change and grey matches our granite work tops better.
We never did get a satisfactory explanation and I believe the "stain" was actually a manufacturing defect in the sink.

Thanks - not sure if others provide the same warranty as blanco hence why the probably cost a lot more
Weren't you tempted to go for stainless steel second time around
I am a bit stuck as to what to do - white granite will look great but worried it may stain and start to look dirty very quickly
I assume non granite like the franke tectonite made from synthetic tectonite will stain easier or will that be a better option than granite?0
