Tax/Insurance For Mystery Shopping

Hi,
wondering if anyone can help me?
I work full time, and am considering doing some mystery shopping to earn extra cash (every little helps, as they say!).
I have already signed up with some agencies, but I am going to legally do this, and declare my income to the government. Also, would I need to separate out income/stationary & refund of expenses?
How do I go about doing this - in the past, I have earnt about £200 per year, and not declared it (I know, big slap on the wrists!:eek:). Anyhow, as I said, I would legally like to do this from now on.
Any comments would be appreciated.
