Other uses for stuffing for a vegetarian

Hi, this is my first post although like many before I have been reading (and absorbing) this forum for a couple of years. Thanks very much for all the information over this time. This website has changed my life for the better.

My question is that I have a dried stuffing packet that is about to go out of date and I have no idea what to with it. It was in a christmas hamper last year and has been lurking in my cupboard since then.

I am vegetarian and a fairly basic cook (i.e. I make the same meals over and over again) but would like to try something new.

    Hello and welcome,

    I am not a veggie, but cook for my sister a lot she is a veggie, how about cutting some peppers in half, fill them with the stuffing, and bake in the oven, once they are nearly done take them out crack an egg on the top and put back in oven till done Yum xx

    I had a packet of stuffing a couple of years ago which had a recipe for burgers on the back of it. I can't remember the actual recipe but I know it had chopped nuts in too. I did make them and they were nice. I suppose you could add some chopped veggies to it (pepper, celery, mushrooms, whatever you fancy).

    I sometime use stuffing as a crunchy topping for a vegetable bake - mixed with some grated cheese and popped in the oven until cooked it's lovely.

    Love redruby's idea too, I guess you could always add some chopped cherry tomatoes to the stuffing mix when doing this recipe too?

    (Oh and was I the only one to read the title of this thread and initially think it said "other uses for stuffing a vegetarian"? :D)

    Just wanted to add that I just cut the tops off of the peppers (as opposed to slicing them lengthways in half) and blanch them in boiling water for a few minutes (use tongs). Then cook the stuffing according to the directions, stuff the peppers, put in shallow dish and add water to the bottom so the bottom of the peppers don't burn in the oven. After 20 minutes I add a bit of cheese on the top and let it melt for a few more minutes. Two peppers is easily a full meal on their own! good luck!

    I was going to suggest the stuffed peppers too (or if not peppers maybe big flat mushroom?)

    I saved this recipe from the back of a pack of stuffing mix. Never tried it yet but I will one day!

    Vegetable Rissoles

    6oz (170g) pack sage & onion stuffing mix
    7 fl oz (200ml) boiling water
    4oz (125g) carrots, grated
    40z (125g) cabbage, finely chopped
    1 egg, beaten

    In a large bowl, mix the stuffing & water together well
    Add cabbage, carrot & egg & mix thoroughly
    Cover with cling film and chill in fridge for about 30 mins
    Place mixture on floured work surface, shape into 6 rounds and flatten to 1/2 inch thick
    Chill in fridge for a further 30 mins
    Shallow fry for 5 mins on each side, drain on kitchen paper & serve immediately
    :D I haven't bogged off yet, and I ain't no babe :D

    Hi everyone

    Thanks for all your useful suggestions. I particularly like the stuffed peppers/mushrooms idea as I always have some of them around (and it sounds easy). I wouldn't have thought of using it as a casserole topping but that sounds very tasty (esp. sausage casserole).

    Buffy, I must admit that when I read it back I thought that too but I suppose it is stuffing a vegetarian.....with stuffing hopefully.;)

    Thanks again everyone and I am really glad that I took the leap and have now actually posted on the forum that has been such a big part of my life up till now.
