Are there any major differences between these and are people preferring to use one over the other?

Mail on W10 just works for home emails. Does everything I want it to, so have ditched Thunderbird and just gone with it.
That said, all these things boil down to a personal preference and I try to spend as little time as possible with emails.
Anway, just load up a couple of accounts and run at the same time as your other client and see which you prefer. No rules about running more than one email client.Drinking Rum before 10am makes you

For home use I wouldn't use Outlook. It is overkill and unnecessarily complicated. The Windows 10 mail client will be too basic for some users (me included). There are many options between the two out there.0
