UKCPS parking ticket even though paid displayed!

I went to Bury last Sunday and paid £3 for a ticket that I left on my dash as its a none sticker type. This was valid for about six hours. I was away for about two.
Four days later I get a parking ticket asking for £100!
Reason of issue: Without a valid pay and display ticket (or prepayment arrangement)
The ticket was clear to see on the dash and it was an enclosed car park with the meter in the car park.
How can they get away with this? The ticket has gone, in the bin so how can I defend this robbery?
