Ok, it's not 12 months until next year and it's the beginning of Nov now. So based on the 12 month guarantee per the OP, it was bought in Sept 2006.
The OP has a slip with the works completed on it. So, the OP may also have the time on the job listed as suggested by another poster.
Word against word is just that. Neither party has enough evidence to prove each other wrong in that case. So, it comes down to pressure and who backs down first.

leaving out whether the comet engineer did or did not change the stat, its worth checking if the repair itself carries a warranty. I work for a whitegoods manufacturer and if our engineer repairs an appliance then that repair/part is guaranteed for a year.0

They came out and fixed it, you didnt use it again so it could be the thermostat has became faulty again through non use
In Small claims court the burden of proof is not as severe as you would make out, IMO a judge would find based on the evidence presented here, and witness testimony, that the cooker could not have been fixed at the time. So in this respect she can prove her case.
She cannot prove it to Comet, because they will not want to know anyway, they only listen if you take them to court.

Assuming that you have an engineers report clearly stating that the stat had not previously been replaced, I would go down the Small Claims Court route.
I hate Comets attitude towards after sales, it's only rivalled by the DSG Group's.My farts hospitalize small children0
