 Once it leaves your premises, collected by the buyer or their agent, it is the buyer's responsibility, to claim on their own or their agent's insurance should it be damaged in transit or lost or stolen.
 I'd raise a dispute with eBay itself, clarifying that your listing terms said collect from your premises, the courier was booked and paid for by the buyer not by you, and therefore stands in lieu of the buyer, you fulfilled the defined contract, at yiur premises not the buyer's, and any subsequent default in the delivery process is therefore not your responsibility.0

 PayPal's policy is pretty clear on this, you need proof of postage as a seller. If you can't provide that (as in this case) you'll always lose the case. Nothing else matters to them.0
