County Court Letter Arrived

Hi all
I have posted on here a few times about this as it's been ongoing and was told if I got the county court letter through then to post again, so here I am!
So back in 2016 I had an accident and my car was badly damaged. The entire front end was smashed in. It happened outside a pub near work and it just so happened that my employers owned that land. Next to the pub was a garage. The garage said I could leave it there until someone came out for it. Someone was coming out to it the next morning, but suddenly I got a call from the garage saying they would be closed and I had to move my car immediately. So I just put it in the car park overnight until the collectors came for the car.
About 6 months later I started getting debt collectors and solicitors emails. I was moving house around the time of the accident, so the fine must have gone to my old address as I was changing over my details on DVLA. The thing is, my car was not safe to be on the road, it was clear from looking at it that the front end was smashed in and it was undrivable. I could not appeal it because by the times they got my new address and I knew anything about it, the deadline had passed.
I've spoken to my employer who told me they ended the contract with UKPC in November 2015. I got the PCN in January 2016.
How should I word my defence? I have never had to do anything like this before and I have a newborn, I just can't think clearly for this stress.
