received my copy of Shirley Goodes book regarding cooking for one...(after the influence of folks on here). I had never heard of her...but i like her book, its a nice read as well as full of sensible advice, even almost 20 years on..worth a look on amazon...

I'm on my own and I just make full recipes, but break them into portions and freeze, say, 3 of them and eat 1, or wrap and refrigerate and eat them with different accompaniments throughout the week.
I've also just bought Delia Smith's One is Fun. One of the best things she says is cooking just for one doesn't necessarily mean you're not important. She suggests getting, for example, an individual caffeteire and still drinking fresh coffee if that's what you like. I'm not a fan of Delia, but I do like this book - it's the only one of hers that I own.

After my husband died I took ages to sort out cooking as I was so used to cooking for the pair of us ,but now I have it down to a fine art and can make four -six meals out of one packet of mince .One to eat, the rest to freeze individually. I even freeze small portions of vegatables in small containers.and a pound of carrots peeled sliced and doused in boiling water for three minutes then into cold water for five minutes ,drained,patted dry and open freeze in the freezer.I then put them into a plastic food bag so if I only need a small amount I can get it from the bag, no waste, and a fraction of the price of a bag of frozen carrots from the freezer shop. HM soups use up all the slightly past its best veggies .when cold I bag up in bags I bought from Lakeland about 10 for £3.50.resuable afterwards if you give them a good wash.As a previous poster said old chinese take-away plastic cartons are great for portions ,but I also have lots of individual brown earthenware dishes I have bought from bootsales for about 20p that will do a single size shep.pie from freezer to oven to table .Only have to do the veg to add to it. Even a small chicken for about £2.50 will make a roast dinner ,a casserole ,plus several portions of curry with the left overs .if you do it in the SC then the stock will be a great base for chicken noodle soup. I can live on around £50.00 a month if I'm determined and even my DD's call me Frau Frugal.
The Shirley Goode cook book is terrific or Cas Clarke's 'Grub on a grant' is pretty good as well. Both can be found in second hand book shops for about a quid0 -
I have never been able to cook for one person, so I have always done the cook and portion out foods.
This was great when I had a freezer, so convenient to pop into containers and leave for meals when I got home late.
However, I am now struggling as the current place I am living in doesn't have a freezer! It means I have to really plan my meals and only buy what I need for a few days at a time - has been quite good in cutting down my food costs, as I am very conscious of space.
However, I can't wait til I move again to a place with a freezerCouch to 5K Running 2009/2010/2011

Something that absolutely infuriates me is that today I decided to cook a one person casserole I used to cook donkeys years ago when I was at Uni in my new casserole dish I got for Xmas. I cannot find a shop that will sell me a single chicken breast.Even the only butcher in our large town sold only multipacks.I don't have any room in the freezer nor do I want to keep eating the same thing over and over. I only wanted to treat myself to a nice dish I hadn't had in years.:mad: :mad:What Would Bill Buchanan Do?0
