The Paschoe Estate has all the hallmarks of a classic bucolic retreat: a pleasingly remote Devon setting, a mention in the Doomsday Book and a roll call of outdoorsy pursuits on its doorstep. But when proprietor Tabitha Amador-Christie took on the challenge of breathing life back into the crumbling building in 2016, she didn’t want to create just another trad country house hotel.


The result of a year of renovations, interior overhauls and taxidermy curation (Paschoe houses a menagerie of stuffed animals) is a beautifully unique boutique hotel with nine Pinterest-worthy bedrooms and an innovative restaurant knocking out some of the best food for miles.


Dishes crafted from the pick of the region’s rich pastures and coastline are as attractive as the banquette-lined, bronze-accented dining room in which guests indulge in head chef Craig Davies’ menus. Those opting for the Paschoe Prestige Tasting flight this season will feast on diver scallops with belly pork, locally shot red deer and salt baked celeriac, and turbot with mussel curry and seaweed potatoes.
